Ingredients

  • 1 1/2 cups flour
  • 1 dash salt
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 large egg, beaten
  • 3/4 cup sugar
  • 1/3 cup butter, melted
  • 4 medium overripe bananas

Directions

  • Preheat oven to 350 °F (175 °C). Grease loaf pan.
  • Combine bananas and butter.
  • Add sugar, egg and vanilla. Stir well.
  • Add baking soda and salt.
  • Add flour and combine.
  • Pour into loaf pan. Bake for 1 hour.
  • Cool then serve.
  • Note: coconut or almond emulsions can be used instead of vanilla. Nuts and chocolate chips can also be added for a different flavor.
