  • 4 tbsps butter
  • 1 cup sugar
  • 1 large egg
  • 1 cup whole wheat flour
  • 1 cup flour
  • 1 1/2 tsps baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2/3 cup mashed banana
  • 1 1/4 cups chopped cranberries
  • 1/2 cup chopped walnuts

Directions

  • Pre-heat oven to 350 °F (175 °C).
  • Mix sugar and butter, then add egg and beat together.
  • Add flour, baking soda, salt, baking powder and mix.
  • Mix in mashed banana (old bananas work best), cranberries and nuts.
  • Put lumpy and sticky dough into 16 muffin cups and bake for 25-27 minutes until toothpick inserted comes out clean.
