Ingredients

  • 1 cup whole hull-less barley
  • 1 cup dry sprouted mung beans
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw pepitas
  • 1/2 cup dried cranberries
  • juice of 1/2 a lemon
  • 2 tbsps white balsamic vinegar
  • 2 tbsps olive oil

Directions

  • Prepare a barley and mung beans according to package directions.
  • Drain and then mix with the other ingredients. Add salt and pepper to taste.
