Ingredients
- 1 lb lean beef top sirloin
- 1 3/4 cups beef stock
- 2 tbsps soy sauce
- 1 cup asparagus, chopped
- 1 cup portabella mushrooms, diced
- 1/2 medium sweet red pepper, chopped
- 1 tbsp ginger
- 2 cloves garlic
- 1 tbsp corn starch
- 1 tbsp olive oil
Directions
- Slice beef into strips.
- Mix broth, corn starch, soy sauce, and ginger in a bowl and set aside.
- In nonstick skillet add olive oil and garlic cook for 2-3 minutes. Add beef and brown until done.
- Add vegetables and cook until tender.
- Pour sauce mixture over meat and vegetables, simmer for 10 minutes or until sauce reaches desired consistency.
