  • 1 1/2 lbs beef shortribs (choice grade)
  • 40 g panang curry paste
  • 1 medium red bell pepper
  • 2 cups coconut milk
  • 1 cup coconut milk unsweetened
  • 4 tbsps fish sauce
  • 3 tsps coconut sugar

Directions

  • Heat curry paste until oil is seeping. Add coconut milk unsweetened.
  • Add beef and cook until surface is brown.
  • Add the rest of coconut milk and some water to cover the meat. Cook until tender.
  • Add fish sauce, sugar, and bell pepper. Simmer for 10 minutes.
  • Transfer to a bowl and garnish as desired.
