Black and White Turkey Chili

  • 1 1/2 cups black beans
  • 28 oz cannellini beans
  • 1 lb ground turkey
  • 28 oz tomatoes
  • 1/4 cup garlic, chopped
  • 2 tbsps chili powder
  • 1 medium yellow onion, chopped
  • 1 cup chopped red onion
  • 3 stalks medium celery, chopped
  • 4 oz green chilies
  • 2 tsps pepper
  • 1 tbsp italian seasoning
  • 1 tbsp rosemary
  • 2 tsps leaves oregano
  • 3 servings 1 packet xylitol sweetener (3 tsp)
  • 1 tsp red pepper flakes
  • 6 cups water
  • 1 tbsp extra virgin olive oil
  • 1 tsp seasoning salt

Directions

  • Soak black beans in large bowl of water with 1-2 teaspoons of baking soda overnight. Rinse well. Place in crockpot.
  • Heat skillet to medium-high, add extra virgin olive oil, yellow onion, a heaping tablespoon chopped garlic and celery. Add in a teaspoon black pepper, rosemary, Italian seasoning, a teaspoon chili powder, oregano, and 1/2 teaspoon seasoning salt.
  • Sauté until slightly tender. Add all to crockpot.
  • In uncleaned skillet, add ground turkey and remaining spices.
  • Cook, stirring frequently, until browned. Add to crockpot.
  • Add remaining ingredients (except for the red onion, save for topping) to crockpot. Stir and cook on low approximately 8 hours.
  • Serve with shredded cheddar or pepper jack cheese, lite sour cream and chopped red onions.
