Ingredients

  • 5 sprigs cilantro
  • 19 oz black beans
  • 1/2 lime yields lime juice
  • 3 cloves garlic
  • 1 tsp pepper
  • 1/2 hot chili
  • 3 italian roma tomato
  • 1/4 tsp sea salt
  • 1/4 cup chopped red onion

Directions

  • Mince garlic and red onion.
  • De-stem and chop cilantro. Careful not to touch the pepper - deseed and mince the hot chili pepper.
  • Mix ingredients together in a bowl with the juice of the lime.
  • Chop tomato. Remove seeds if desired.
  • Drain and rinse canned black beans.
  • Mix together all ingredients.
  • Serve tossed with a salad or alone.
  • Note: can also be used in a wrap and delicious with avocado.
