A great salad for summer that tastes incredible.

Ingredients

  • 2 cups black beans
  • 1 can yellow corn
  • 1/2 cup chopped red onion
  • 1 large green pepper
  • 1 medium whole tomato
  • 1/4 cup cilantro
  • 2 limes yield lime juice
  • 1 tbsp olive oil
  • 1 dash salt
  • 1 dash black pepper

Directions

  • Drain and wash the black beans and corn.
  • Dice the tomato, green pepper and red onion.
  • Chop the cilantro.
  • Mix all ingredients in a large bowl.
  • Juice the limes and pour over.
  • Add a tablespoon of olive oil.
  • Add salt and pepper to taste.
  • Mix and enjoy. I like to chill it for a bit.
