  • 30 g black beans, canned drained and rinsed
  • 1 cup corn
  • 10 cherries tomatoes, quartered
  • 1/2 cup chopped sweet red pepper
  • 15 g pumpkin seeds, coarsly chopped
  • 1/4 cup corriander, chopped
  • 2 tbsps olive oil
  • 0.12 cup lemon juice
  • 2 medium spring onion, chopped
  • 1 tsp packed brown sugar

Directions

  • Mix all ingredients together and serve.
  • This salad will keep for a couple of days and gets more flavorful if you let it marinate in the refrigerator for awhile.
