Ingredients

  • 1/4 tsp salt
  • 1/2 tbsp apple cider vinegar
  • 1 cup whole grain oat flour
  • 2 eggs (large)
  • 1 cup almond flour blanched
  • 1 tbsp extra virgin olive oil
  • 1/2 cup pure almond milk - unsweetened original
  • 1 cup blueberries
  • 3/4 tsp cinnamon
  • 1 tsp vanilla extract
  • 3/4 tsp baking soda
  • 5 1/2 tbsps maple syrup

Directions

  • Preheat oven to 350°F. Put paper liners in muffin tins.
  • Sift together dry ingredients.
  • Mix wet ingredients together.
  • Combine dry and wet mixture together. Set aside.
  • Fold blueberries into batter.
  • Pour batter into muffin tins. Bake 18-25 minutes or until toothpick comes out clean.
