Ingredients

  • 1 large egg
  • 1 1/4 cups nonfat milk
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups bran flakes
  • 1/4 cup applesauce
  • 2 tsps baking powder
  • 1/4 cup sugar
  • 3/4 cup flour

Directions

  • Stir dry ingredients together. Set aside.
  • Place cereal and milk into large mixing bowl. Let stand 2-3 minutes.
  • Stir egg and applesauce into cereal mixture.
  • Add flour mixture, stirring until moistened.
  • Optional to fold in some raisins or a little pumpkin.
  • Portion batter evenly into 12 greased muffin cups. Optional to add some chopped nuts on top.
  • Bake at 400 °F (200 °C) , for 18-20 minutes or until lightly browned.
  • Serve warm.
