Ingredients

  • 2 cups brown rice (long-grain, cooked)
  • 9 oz tomato paste
  • 1 medium onion
  • 6 cloves garlic
  • 4 tbsps nutritional yeast
  • 2 tbsps olive oil
  • 4 cups water
  • 1 tsp adobo all purpose seasoning
  • 1 tsp black pepper
  • 1 tsp turmeric (ground)

Directions

  • Chop onion and garlic. Sauté in pot with olive oil.
  • Add rice, tomato paste, and seasonings.
  • Add water and stir until tomato paste is dissolved. Bring to boil.
  • Reduce temperature and simmer while covered. Stir occasionally until liquid is absorbed.
