Ingredients

  • 1 head cabbage
  • 1 lb onion
  • 2 cups chopped bell pepper
  • 2 cups chopped celery
  • 5 cloves garlic
  • 4 cups chopped carrots
  • 1 packet onion soup mix
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp garlic
  • 6 cups chicken broth
  • 4 cups pieces or slices mushrooms
  • 1 tbsp extra virgin olive oil

Directions

  • In a large stock pot add the extra virgin olive oil on medium heat.
  • Add onions, garlic and peppers, heat until onions are clearish.
  • Add celery and mushrooms.
  • Add carrots, soup mix (like lipton's brand), chicken stock and spices.
  • Bring to a boil, turn down to simmer.
  • Add cabbage pushing it down into the liquid, then add filtered water until cabbage is covered.
  • Cook for one hour and let cool down before serving.
