  • 6 cups chopped cabbage
  • 7 stalks medium celery
  • 16.5 oz low sodium 100% vegetable juice
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 1 medium onion
  • 1 package onion soup (dry mix)
  • 1 tbsp avocado oil
  • 1 3/4 cups diced tomatoes
  • 2 beef bouillon cubes

Directions

  • Dice the onion, peppers, and celery. Sauté in oil until tender crisp.
  • Add tomatoes, vegetable juice, onion soup dry mix and beef cubes. Simmer for 15 minutes.
  • Chop cabbage into small pieces. Add to pot and cook for 15 minutes.
  • Serve or store in jars for later consumption.
