Ingredients
- 6 cups chopped cabbage
- 7 stalks medium celery
- 2 beef bouillon cubes
- 16.5 oz low sodium 100% vegetable juice
- 1 medium green bell pepper
- 1 medium red bell pepper
- 1 medium onion
- 1 package onion soup (dry mix)
- 1 tbsp avocado oil
- 1 3/4 cups diced tomatoes
Directions
- Dice the onion, peppers, and celery. Sauté in oil until tender crisp.
- Add tomatoes, vegetable juice, onion soup dry mix and beef cubes. Simmer for 15 minutes.
- Chop cabbage into small pieces. Add to pot and cook for 15 minutes.
- Serve or store in jars for later consumption.
