  • 1/2 small cantaloupe, chopped
  • 2 tsps mint sprigs, chopped
  • 1 dash black pepper
  • 1/2 tsp lemon juice
  • 1 oz prosciutto, fat removed, thinly sliced
  • 1 oz goat cheese, chopped

Directions

  • Combine melon with pepper, fresh mint and lemon juice.
  • Arrange prosciutto evenly over melon mixture.
  • Sprinkle with goat cheese.
  • Garnish with fresh mint sprigs and cracked pepper.
  • Note: instead of goat cheese try parmigiano-reggiano cheese or asiago cheese.
