Ingredients
- 1/2 small cantaloupe, chopped
- 2 tsps mint sprigs, chopped
- 1 dash black pepper
- 1/2 tsp lemon juice
- 1 oz prosciutto, fat removed, thinly sliced
- 1 oz goat cheese, chopped
Directions
- Combine melon with pepper, fresh mint and lemon juice.
- Arrange prosciutto evenly over melon mixture.
- Sprinkle with goat cheese.
- Garnish with fresh mint sprigs and cracked pepper.
- Note: instead of goat cheese try parmigiano-reggiano cheese or asiago cheese.
