Ingredients

  • 2 medium tomatoes
  • 2 tbsps extra virgin olive oil
  • 2 tbsps balsamic vinegar
  • 1/4 tsp Himalayan pink salt
  • 8 oz mozzarella pearls
  • 2 tbsps diced green chiles
  • 2 tbsps pesto sauce
  • 4 portobello mushroom caps

Directions

  • Coat portobello mushroom caps with olive oil, back and front then broil caps for 15 minutes.
  • Mix together remaining ingredients.
  • While caps are broiling, spoon mixture onto the four caps evenly.
  • Return to broiler for 10-15 minutes until cheese is melted.
