- 3/4 cup carrots, cooked, chopped
- 4 oz applesauce
- 1 package carrot cake mix
- 3.5 oz vanilla whey protein
- 1 3/4 cups whipped cream cheese frosting
- 1/4 cup almond milk
- 1/4 cup egg substitute
Directions
- Preheat oven to 350 °F (175 °C).
- Mix all ingredients (use food processor to chop carrots).
- Drop by heaping scoops into greased/lined muffin pan.
- Bake for 18-22 minutes
- Let cool then use frosting to ice the cupcakes.
