  • 1 package carrot cake mix
  • 1/4 cup almond milk
  • 3.5 oz vanilla whey protein
  • 4 oz applesauce
  • 3/4 cup carrots, cooked, chopped
  • 1/4 cup egg substitute
  • 1 3/4 cups whipped cream cheese frosting

Directions

  • Preheat oven to 350 °F (175 °C).
  • Mix all ingredients (use food processor to chop carrots).
  • Drop by heaping scoops into greased/lined muffin pan.
  • Bake for 18-22 minutes
  • Let cool then use frosting to ice the cupcakes.
