  • 30 g coconut flour
  • 40 g pitted dates
  • 2/3 cup multigrain cereal
  • 80 g dried apricots
  • 50 g 2% greek yogurt
  • 110 g banana
  • 1 tbsp lemon peel
  • 190 g egg
  • 130 g carrots

Directions

  • Soak the dates and apricots for 15 minutes. Drain.
  • Combine the dates, apricots, mashed banana, grated carrots, yogurt, and egg.
  • Add the remaining ingredients and mix.
  • Put the mixture in muffin mold. Distribute evenly.
  • Bake in preheated oven at 180°C for 35-40 minutes.
