- 50 g 2% greek yogurt
- 110 g banana
- 190 g egg
- 30 g coconut flour
- 130 g carrots
- 80 g dried apricots
- 40 g pitted dates
- 1 tbsp lemon peel
- 2/3 cup multigrain cereal
Directions
- Soak the dates and apricots for 15 minutes. Drain.
- Combine the dates, apricots, mashed banana, grated carrots, yogurt, and egg.
- Add the remaining ingredients and mix.
- Put the mixture in muffin mold. Distribute evenly.
- Bake in preheated oven at 180°C for 35-40 minutes.
