- 139 g carrots
- 1 medium egg
- 30 g parmesan cheese (shredded)
- 81 g tuna in oil (canned)
- 1/4 cup slices cucumber (with peel)
- 2 medium leaves lettuce
- 30 g greek whole milk yogurt plain
- 1/2 tsp mustard
Directions
- Grate carrots then mix with egg and parmesan cheese.
- Divide into two portions, flatten, and bake in the oven at 428°F for 12-15 minutes.
- Mix tuna, sliced cucumber, shredded lettuce, yogurt, and mustard in a bowl.
- Spread the tuna mixture over the carrot tortilla then serve.
