Ingredients

  • 1 head large cauliflower
  • 30 oz black beans (canned)
  • 8 cloves garlic
  • 16 oz dry organic 100% whole wheat fusilli
  • 4 tbsps extra virgin olive oil
  • 1 tsp adobo all purpose seasoning
  • 1 tsp paprika
  • 1 tsp turmeric (ground)
  • 1 tsp black pepper

Directions

  • Coarsely chop garlic and sauté in 2 tbsps olive oil.
  • Add cauliflower, beans, seasonings, and half cup water. Stir and cover. Allow to simmer on low heat.
  • Cook pasta according to packaging.
  • Drain pasta and combine with cauliflower-bean mixture. Add the rest of olive oil and mix.
  • Transfer to plate then serve.
