  • 1 cup eggs
  • 1 tsp pepper
  • 1 tsp salt
  • 1 tbsp sunflower oil
  • 1/2 head medium cauliflower
  • 2 medium spring onions, diced
  • 1/2 cup peas and carrots

Directions

  • Rice cauliflower in food processor.
  • Heat oil, add vegetables and seasonings.
  • When a bit translucent, push to side and crack and scramble egg on clear side.
  • Drag vegetables through.
  • Season with soy or ginger dressing, curry powder, or other spices (adding salsa makes a quick Spanish rice).
