  • 1 oz goat cheese
  • 2 chicken breasts, bone and skin removed
  • 1/2 cup artichoke hearts

Directions

  • Pre-heat oven to 375 °F (190 °C).
  • Flatten chicken breast to 1/8".
  • In food processor, combine artichoke hearts and goat cheese. Combine until creamy.
  • Split between two breasts. Spoon onto each breast in the middle, folding breast over mixture.
  • Bake for 15-20 minutes depending on size of breast.
