Ingredients

  • 1/4 cup water
  • 3/4 cup shredded cheddar cheese
  • 1 oz peppers
  • 1 dash pepper
  • 1 dash salt
  • 1 cup spinach
  • 1 cup cauliflower
  • 1/4 cup chopped onion
  • 1/3 cup green string beans
  • 1 cup cream
  • 2 jumbo eggs
  • 1/2 cup chopped carrots

Directions

  • In an ovenproof pyrex dish, steam the washed spinach, and other vegetables for about 5 minutes, just to soften a little.
  • In a separate mixing bowl, beat the eggs with the cream and water. Add the grated cheese, salt and pepper, mix well.
  • Mix the vegetables around in the pyrex dish. Leave to cool a little before pouring the liquids in.
  • Sprinkle with a little cheese and bake for about 35 minutes in a 375 °F (190 °C).
  • Serve with baby spinach or leafy greens. Delish!
