Cheesy Egg Burrito

An easy to make, low calorie burrito that's great for a hearty brunch.

Ingredients

  • 1/4 cup cilantro chopped
  • 1 lavash flat bread
  • 2/3 cup reduced fat Mexican style cheese
  • 4 large eggs
  • 3 tbsps chopped chives
  • 2 tsps minced garlic
  • 1/4 cup pieces or slices mushroom
  • 1/4 cup chopped green peppers
  • 1/4 cup chopped roma tomatoes
  • 2 1/2 oz boiled potatoes

Directions

  • In a sauce pan, sauté chopped vegetables and garlic in water (about 1/4 cup).
  • Cook until tender, drain water from pan.
  • Add eggs and add a dash of salt, pepper, chili powder and oregano to taste.
  • Mix eggs, vegetables and spices until eggs are cooked. Remove from heat.
  • Place egg mixture along the long side of lavash bread and top with cheese.
  • Roll up, cut in half and each half is one serving. Enjoy.
  • Note: you can also serve with salsa and sour cream.
