Ingredients

  • 2 large eggs
  • 3 oz goats cheese
  • 2 tbsps pesto
  • 1 dash salt
  • 4 cups spinach
  • 1/2 cup cooked brown rice
  • 3 tbsps cream cheese, low fat
  • 1/2 cup grated parmesan cheese

Directions

  • Pre-heat oven to 400° F (200° C).
  • Spray pie pan with spray oil.
  • Mix all ingredients.
  • Pour into pan.
  • Bake 20 minutes or until bubbly.
  • Grab a fork and enjoy.
  • Note: this recipe was a "surprise" as it was so delicious my 14 year old daughter licked the pan!
