Chicken and Herb Salad
A refreshing chicken, herb and mayonnaise salad to serve with lettuce as a roll up or in a sandwich.

- 300 g chicken breasts, cooked
- 3 tbsps mayonnaise
- 2 tbsps chopped chives
- 2 tbsps celery, chopped
- 2 tbsps chopped spring onions
- 1 dash salt
- 1 dash pepper
Directions
- Cut up cooked chicken into bit sizes pieces.
- Combine chicken with all the other ingredients.
- Divide into three servings and store in refrigerator.
- Add to lettuce and roll up to enjoy a low carb chicken roll up or sandwich.
