A refreshing chicken, herb and mayonnaise salad to serve with lettuce as a roll up or in a sandwich.

  • 300 g chicken breasts, cooked
  • 3 tbsps mayonnaise
  • 2 tbsps chopped chives
  • 2 tbsps celery, chopped
  • 2 tbsps chopped spring onions
  • 1 dash salt
  • 1 dash pepper

Directions

  • Cut up cooked chicken into bit sizes pieces.
  • Combine chicken with all the other ingredients.
  • Divide into three servings and store in refrigerator.
  • Add to lettuce and roll up to enjoy a low carb chicken roll up or sandwich.
