Ingredients

  • 1 tsp ginger (ground)
  • 1 clove garlic
  • 1 tsp paprika
  • 1 cup coconut milk unsweetened
  • 1 dash salt
  • 2 g ground black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp cayenne pepper spice
  • 3 portobello mushroom caps
  • 56 g egg tagliatelle nests
  • 1/2 medium onion
  • 50 g parmesan cheese (shredded)
  • 1 cup cooked, diced skinless chicken breast

Directions

  • Cook pasta according to packaging directions.
  • In a non-stick pan, cook chicken until golden.
  • Chop onion, garlic, and mushrooms. Add to pan and cook until translucent. Season with salt and black pepper.
  • Add coconut milk, remaining spices, and half of parmesan cheese. Simmer until the sauce thickens.
  • Transfer pasta into the pan of sauce and mix.
  • Transfer to a plate. Sprinkle remaining parmesan cheese on top then serve.
