- 2 cans asparagus pieces
- 1 small onion, chopped
- 25 g flour
- 2 oz unsalted butter, light (2 tbsp)
- 4 cups chicken broth
Directions
- Melt butter over medium heat, then mix in flour. Add in diced onion and sauté for 3 minutes.
- Add in both cans of asparagus pieces and the chicken broth. Simmer for 20 minutes.
- Ladle small portions of the soup into a blender and puree.
- Season to taste.
