Ingredients

  • 2 oz mozzarella cheese, skim
  • 1 extra large egg
  • 1 dash pepper
  • 1 dash salt
  • 1 tsp olive oil
  • 1/2 cup chopped or diced roasted chicken
  • 5 rings onion

Directions

  • In a sauté pan, add the oil and sauté the onions and the cooked chicken cook until soft.
  • Scramble the egg and add the salt and pepper.
  • Pour over the chicken and onion.
  • Sprinkle the cheese on top when done on one side.
  • Turn and cook the other side until done. Serve and enjoy.
