Chicken in Bechamel Sauce
A simple sauce with cheese and chicken.

Ingredients
- 1 1/2 breasts, bone and skin removed grilled chicken breast
- 2 tbsps parmesan cheese, shredded
- 8 oz skim mozzarella cheese, grated
- 2 cups milk, lowfat
- 2 tbsp flour
- 3 tbsps butter
Directions
- Melt the butter on low to medium heat.
- When the butter is completely melted, add the flour and make sure there are no lumps.
- Add the milk and let it come to a boil at low heat. Stir often.
- Chop the chicken to small bite size pieces.
- Add the mozzarella and let it melt, keep on a low heat until the cheese is no longer "stringy".
- Add the chopped chicken and the parmesan cheese, and stir it in.
- Serve with pasta and a salad.
