Ingredients

  • 1/4 tsp ground black pepper
  • 1 tbsp extra virgin olive oil
  • 1 cup baby spinach
  • 6 cups chicken broth
  • 3 boneless and skinless chicken breasts
  • 1 tsp turmeric (ground)
  • 1/4 tsp cayenne pepper
  • 1 slice ginger
  • 3 cloves garlic
  • 1 stalk medium celery
  • 1 medium onion
  • 10 fresh baby carrots
  • 8 oz thin spaghetti

Directions

  • Dice vegetables except spinach, then sauté in a pan with olive oil until softened.
  • Add broth and bring to a boil. Add chicken breasts and cook at medium heat, covered, for about 20 minutes.
  • Take chicken out and shred. Bring back to boil, add shredded chicken, spices, and pasta broken into pieces. Cook for 3 minutes.
  • Lower heat. Add spinach and stir.
  • Serve immediately.
