Ingredients
- 12 oz 99% fat free boneless skinless chicken breasts
- 1 1/2 cups dry instant whole grain brown rice
- 1 tbsp canola oil
- 1 medium onion
- 7 1/2 oz white sliced mushrooms
- 1 1/3 cups peas & carrots
- 2 cups 99% fat free chicken broth
Directions
- Saute chicken in oil until lightly browned.
- Add mushrooms, onion, peas and carrots, and rice and saute, stirring until rice is lightly browned.
- Add broth and bring to a full boil.
- Cover, remove from heat and let stand 5 minutes.
