Ingredients
- 1 1/2 lbs chicken breast meat
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup diced baby portabellas
- 1 1/3 cups half and half
- 2 cups brown rice
- 3 cups chicken broth
- 1 tsp cayenne pepper
- 1 dash salt
Directions
- Cook chicken and rice.
- Boil broth and once boiled, add celery and carrots.
- Add half and half.
- Combine with chicken and rice, and seasonings.
- Simmer.
- Tastes best after a few hours of refrigeration to blend flavors.
