- 16 cups chicken broth
- 7 medium carrots
- 3 tbsps minced garlic
- 3/4 tsp salt
- 3 medium bell peppers
- 4 tbsps thyme
- 1 tbsp black pepper
- 5 tsps crushed red pepper flakes
- 2 bay leaves
- 1 medium onion
- 42 oz boneless skinless chicken breast
- 4 1/2 cups cheese tortellini
- 1 tbsp olive oil
- 2 cups cream (half & half)
Directions
- Wash and chop vegetables.
- Heat oil in a pan then add onions. Cook until translucent.
- Add garlic. Stir and cook for 1-2 minutes until fragrant.
- Add chicken and broth. Bring to a boil then simmer until the chicken is done.
- Add vegetables, tortellini, and seasonings. Cook until tender.
- Remove from heat then add half and half.
- Transfer to a bowl then serve.
