Ingredients
- 2 tbsps olive oil
- 18 oz new potatoes, boiled
- 1/3 tbsp honey
- 1 oz vegetable fat spread
- 1/3 tbsp fresh parsley, chopped
- 1 lemon, sliced
- 1 tsp leaves mixed herbs
- 12 small black olives, chopped
- 1 cup chicken stock
- 4 breasts, bone and skin removed chicken breasts
Directions
- Heat the oil in a saucepan and fry the chicken until lightly browned.
- Add the stock, mixed herbs and lemon. Cover and simmer for 20 minutes.
- Remove chicken and whisk in parsley, spread and honey. Boil and reduce until slightly thickened.
- Replace chicken and reheat.
- Serve with the boiled new potatoes and your choice of mixed vegetables.
