Ingredients

  • 2 tbsps olive oil
  • 18 oz new potatoes, boiled
  • 1/3 tbsp honey
  • 1 oz vegetable fat spread
  • 1/3 tbsp fresh parsley, chopped
  • 1 lemon, sliced
  • 1 tsp leaves mixed herbs
  • 12 small black olives, chopped
  • 1 cup chicken stock
  • 4 breasts, bone and skin removed chicken breasts

Directions

  • Heat the oil in a saucepan and fry the chicken until lightly browned.
  • Add the stock, mixed herbs and lemon. Cover and simmer for 20 minutes.
  • Remove chicken and whisk in parsley, spread and honey. Boil and reduce until slightly thickened.
  • Replace chicken and reheat.
  • Serve with the boiled new potatoes and your choice of mixed vegetables.
