Chicken with Watermelon Salsa

Grilled chicken with a refreshing fruity salsa that's great for the summer.

  • 2 tsps canola oil
  • 1 wedge yields fresh lime juice
  • 4 breasts, bone and skin removed chicken breasts
  • 2 cups diced watermelon
  • 1/2 large yellow bell pepper
  • 3 cups cilantro
  • 1 tbsp chopped red onion
  • 2 limes yield lime juice

Directions

  • To prepare chicken, in cup or small bowl combine oil and 1 teaspoon of fresh lime juice; brush chicken breasts with oil mixture.
  • Grill or broil chicken until cooked through and juices run clear.
  • Meanwhile, in medium bowl combine salsa ingredients (watermelon, yellow bell pepper, cilantro, 2 tablespoons fresh lime juice and red onion), mixing well.
  • Place 1 cooked chicken breast on each plate; top each with 1/4 of the salsa.
