Ingredients

  • 2 tbsps ground cumin
  • 4 tsps ground dried oregano
  • 1 tbsp red chilli powder
  • 2 tsps olive oil
  • 1 1/2 cups chicken broth
  • 1/4 cup cilantro, chopped
  • 6 cloves garlic, crushed
  • 1 medium onion, chopped
  • 1 medium green pepper, diced
  • 1 can diced tomatoes
  • 1 1/2 cups canned tomato sauce
  • 1 cup corn kernels
  • 3 cups canned black beans

Directions

  • Heat olive oil in a large saucepan.
  • Sauté onion and bell pepperover medium heat for about 5 minutes stirring frequently until translucent.
  • Add garlic,cumin, red chili powder and continue to sauté for another minute.
  • Add broth and rest of ingredients, except cilantro and corn. Simmer for another 20 minutes uncovered.
  • Add corn and cook for another 2 minutes.
  • Add chopped cilantro and season with salt and pepper to taste.
