Ingredients

  • 2 tbsps vegetable fat spread, reduced calorie
  • 1 clove garlic, crushed
  • 12 oz lean pork, cut in strips
  • 2 oz baby sweet corn
  • 2 medium courgettes, cut in matchsticks
  • 1 medium red pepper, cut in strips
  • 1 medium carrot, cut in matchsticks
  • 2 oz cashew nuts
  • 1 dash salt
  • 1 dash black pepper
  • 1 tbsp mild chili sauce
  • 9 oz cooked rice

Directions

  • Melt the spread in a wok or large frying pan, add the garlic and cook, stirring, until soft.
  • Add the pork and stir fry over a moderately high heat until no longer pink.
  • Add the vegetables and stir fry for about 5 minutes until just cooked.
  • Add remaining ingredients and heat through.
  • Serve with rice.
