Chinese Beef and Pepper Salad

A healthy beef salad with a tasty Asian flavor sauce.

  • 1 tsp ginger
  • 2 tbsps extra virgin olive oil
  • 1 clove garlic, minced
  • 2 small scallions, sliced
  • 1 medium red bell pepper, cut into slivers
  • 1 lb london broil, cut into slivers
  • 1/3 cup soy sauce, light
  • 2 servings 1 packet sugar substitute
  • 1/3 oz dry sherry (1 tbsp)

Directions

  • In small bowl, whisk together soy sauce, oil, sherry, sugar substitute like Splenda, ginger and garlic.
  • Add beef and toss to coat.
  • Cover and refrigerate for up to 1 day until ready to use.
  • Drain beef and reserve marinade.
  • Place beef on plate and toss with pepper and scallions.
  • Serve with reserved marinade on side.
