  • 1/4 cup canola oil
  • 1/4 cup dry yellow corn meal
  • 1 cup all-purpose flour
  • 2 tbsps granulated white pure cane sugar
  • 2 tsps rum extract
  • 4 large eggs
  • 1 1/2 cups low fat 2% small curd cottage cheese

Directions

  • Combine everything (except oil). Mix well each time you add an ingredient.
  • Preheat a skillet with canola oil on a medium heat.
  • Fry the pancakes on each side until golden brown.
