- 1/4 cup canola oil
- 1/4 cup dry yellow corn meal
- 1 cup all-purpose flour
- 2 tbsps granulated white pure cane sugar
- 2 tsps rum extract
- 4 large eggs
- 1 1/2 cups low fat 2% small curd cottage cheese
Directions
- Combine everything (except oil). Mix well each time you add an ingredient.
- Preheat a skillet with canola oil on a medium heat.
- Fry the pancakes on each side until golden brown.
