Ingredients

  • 1/2 tbsp honey
  • 1/2 cup olive oil
  • 1 cup crumbled goat cheese
  • 1/2 cup pecan halves
  • 1/2 cup dried cranberries
  • 1 red onion
  • 8 leaves basil
  • 2 cups spinach
  • 1/2 fennel bulb
  • 2 oranges
  • 5 cups garbanzo beans
  • 3 cups of couscous (cooked)
  • 1/4 cup balsamic vinegar
  • 1/4 cup orange juice

Directions

  • Mix liquid ingredients to make the dressing. Set aside.
  • Mix couscous with the rest of the ingredients.
  • Pour the dressing over the salad and season to taste.
