- 16 oz black beans, dried and rinsed
- 1 large onion, chopped
- 1 medium green bell pepper, chopped
- 5 cloves garlic, minced
- 28 oz diced tomatoes with juice
- 2 tbsps olive oil
- 5 cups water
- 4 tsps cumin, ground
- 1/2 cup chopped or diced green chilies
- 1 tsp salt
Directions
- Mix all ingredients in crockpot.
- Cover and cook on high for 6 to 8 hours, or until most liquid is absorbed.
- Serve over warm brown rice or as a side to lean meat.
