  • 1 unit chicken breast
  • 3 cups chicken stock
  • 1/2 cup pieces or slices mushrooms
  • 1 medium onion
  • 1 package frozen spinach
  • 1/2 medium zucchini, diced
  • 2 1/2 cups water
  • 1/2 cup brown rice

Directions

  • Prepare a crockpot.
  • Add all of the diced vegetables into the crockpot. Also add the diced cooked chicken breast.
  • Add the water and chicken stock.
  • Stir in the brown rice.
  • Season with pepper and thyme.
  • Cook until the rice is tender and done, about 6-8 hours.
  • Note: this is a meal that can be started in the morning and eaten when you get home for dinner.
