  • 5 plum tomatoes
  • 1/4 medium purple onion, thinly sliced
  • 1 medium cucumber
  • 2 tbsps olive oil
  • 2 tbsps red wine vinegar
  • 1 dash salt
  • 1 dash black pepper

Directions

  • In a bowl, mix the tomatoes, onions, and cucumber with the olive oil and red wine vinegar
  • Add salt and pepper to taste.
  • Let stand for approximately 15 minutes. Toss again and serve.
  • Tip: you may serve this crisp salad chilled as well.
