Ingredients

  • 2 tbsps olive oil
  • 2 medium onions
  • 1/2 tsp cumin
  • 1/4 cup tomato paste
  • 425 g canned chickpeas, drained and rinsed
  • 250 g baby spinach, roughly chopped

Directions

  • Heat oil in a pan and cook onions until glassy
  • Add cumin, tomato paste, salt, pepper and sugar. Stir over medium heat for 5 minutes.
  • Add chickpeas and spinach. Reduce heat, cover and simmer for 20- 30 minutes, stirring occasionally.
