An extremely simple lentil dish which is very good over rice.

Ingredients
- 2 cups lentils
- 1 cup chopped onion
- 3 cups chicken broth
- 1 cup chopped broccoli
- 1 cup chopped red pepper
- 1 tbsp curry powder
- 1 tbsp lemon juice
Directions
- Sauté the onions in a small amount of the broth and the lemon juice.
- When the onions are translucent and fragrant, add the curry powder and lentils and sauté for another minute or so.
- Add the rest of the ingredients and simmer until the vegetables are cooked.
- Adjust the amount of curry to taste.
- Serve over long grain rice.
