An extremely simple lentil dish which is very good over rice.

Ingredients

  • 2 cups lentils
  • 1 cup chopped onion
  • 3 cups chicken broth
  • 1 cup chopped broccoli
  • 1 cup chopped red pepper
  • 1 tbsp curry powder
  • 1 tbsp lemon juice

Directions

  • Sauté the onions in a small amount of the broth and the lemon juice.
  • When the onions are translucent and fragrant, add the curry powder and lentils and sauté for another minute or so.
  • Add the rest of the ingredients and simmer until the vegetables are cooked.
  • Adjust the amount of curry to taste.
  • Serve over long grain rice.
