Ingredients

  • 1 tbsp margarine
  • 1 medium onion, finely chopped
  • 1 tsp curry powder
  • 3 lbs butternut pumpkin, peeled and cubed
  • 2 cups chicken broth
  • 1 tsp white sugar
  • 1 dash salt
  • 1 dash black pepper
  • 1 tbsp parsley chopped to garnish

Directions

  • Heat margarine in a pot and cook onions until glassy. Add curry paste and cook for 1 minute. Add pumpkin, stock and sugar.
  • Reduce heat, cover and simmer for 15-20 minutes, until pumpkin is soft. Blend until smooth. Season with salt and pepper.
  • Garnish with parsley and serve.
