Ingredients

  • 2 cups lentils
  • 3 small whole tomatoes
  • 2 small onions
  • 4 cloves garlic
  • 3 tbsps olive oil
  • 3 tbsps cumin
  • 2 tbsps chili powder
  • 2 tbsps coriander
  • 2 tsps ginger
  • 1/4 cup lemon juice
  • 2 tbsps tomato paste
  • 2 tbsps black pepper
  • 3 meatless veggie brats
  • 2 tbsps curry powder
  • 3 1/2 cups water
  • 1 tbsp olive oil

Directions

  • Fry onions, ginger and garlic for 2 minutes on medium until onions brown.
  • Add spices and cook for 1 more minute, then add all other ingredients.
  • Bring to a boil, and simmer on low for 15 minutes.
  • In a separate frying pan, fry sausages for about 5 minutes. Slice up sausages, return to pan and brown sliced edges.
  • Add sausages to lentil mixture, cook on low for 10 additional minutes.
