Ingredients

  • 2 tbsps low fat margarine
  • 1 medium granny smith apple, cut into 1/2" slices
  • 1/3 cup whole wheat pastry flour
  • 1/3 oz sweetener
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 3/4 cup 1% milk
  • 1 cup egg substitute
  • 6 tsps granulated sugar

Directions

  • Heat oven to 400° F (200° C).
  • Heat a tablespoon of the margarine in a 10" cast iron skillet, over medium heat.
  • Add apple pieces and cook until soft and brown, about 5 minutes.
  • Puree the remaining tablespoon of margarine, flour, sugar substitute, sugar, cinnamon, nutmeg, milk and eggs in a blender until just mixed. About 1 minute.
  • Pour batter into the skillet over the sauteed apples and put in the oven and bake for 15 minutes until puffed and set.
  • Serve hot.
