Fresh colorful salad with lots of protein from edamame (soy beans).

Ingredients
- 1 lb edamame
- 1/2 cup cherry cherry tomatoes, halved
- 1 cup parsley, minced
- 3/4 cup chopped red cabbage
- 3 tbsps black olives, coarsely chopped
- 1 clove garlic, finely minced
- 1/2 cucumber, diced
- 1 lime yields lime juice
- 2 tbsps olive oil
- 1 dash salt
- 1 dash pepper
Directions
- Cook edamame according to package directions.
- Allow to cool.
- Meanwhile, prepare other vegetables and mix with cooled edamame in a large bowl with olive oil, lime juice, garlic, salt and pepper.
- Chill and serve.
