  • 1 lb edamame
  • 1/2 cup cherry cherry tomatoes, halved
  • 1 cup parsley, minced
  • 3/4 cup chopped red cabbage
  • 3 tbsps black olives, coarsely chopped
  • 1 clove garlic, finely minced
  • 1/2 cucumber, diced
  • 1 lime yields lime juice
  • 2 tbsps olive oil
  • 1 dash salt
  • 1 dash pepper

Directions

  • Cook edamame according to package directions.
  • Allow to cool.
  • Meanwhile, prepare other vegetables and mix with cooled edamame in a large bowl with olive oil, lime juice, garlic, salt and pepper.
  • Chill and serve.
